3 ways to use our Seasonal Cranberry Spread

Happy Holidays!

The most memorable meals are those shared with loved ones…and the holiday is always a great opportunity for us to come together.

For the holiday season, we’ve introduced our Seasonal Cranberry Spread ($12.00) which is made with locally grown cranberries from Bremner Farms (Delta, BC) and sweetened with honey from Honeyview Farms (Rosedale, BC).

Cranberry Spread is a tradition of Christmas dinners. But it pairs perfectly with other appies, sweets and eats, too! Here are some of our favourite recipes (warning: they’re addictive).

Pick the Seasonal Cranberry Spread up at The Juicery Co (3 locations in Vancouver and North Van), Farm2Table (West Vancouver), Be Fresh Market (W 1st and Cypress) and Edible Canada (Granville Island).

Appetizers, four ways

1. Cranberry Spread Cheese Log (pictured far right)
About 5 tbsp kitskitchen Seasonal Cranberry Spread
Goat Cheese (or any soft cheese of your choice)
Pecans, chopped and whole
Rosemary
Crackers to serve with (we love Lesley Stowe’s Raincoast Crisps!)

Instructions

Using plastic wrap, roll the cheese into a log shape.

Generously top with kitskitchen Seasonal Cranberry Spread, then decoratively place pecans and rosemary.

Serve with crackers.

2. Cranberry Spread Cheese Dip (pictured far left)
About 2 tbsp kitskitchen Seasonal Cranberry Spread
Cream Cheese (or any soft cheese of your choice)
Rosemary for garnish
Crackers to serve with (we love Lesley Stowe’s Raincoast Crisps!)

Instructions

Mix soft cheese with kitskitchen Seasonal Cranberry Spread.

Serve in a bowl with a side of crackers, a sprig of rosemary will make the soft pink-coloured dip pop!

3. Cranberry Spread Crostini
About 1/2 tbsp kitskitchen Seasonal Cranberry Spread per crostini
Soft cheese (optional)
1-2 Baguettes, sliced
Olive oil or butter

Instructions

Heat oven to 350F. Brush sliced baguettes with olive oil or butter, then bake for ~10 minutes.

Top with cheese if desired or just with kitskitchen Seasonal Cranberry Spread.

4. Cranberry Spread + Cheese Phyllo Pastry
About 2 tbsp kitskitchen Seasonal Cranberry Spread
Cream Cheese (or any soft cheese of your choice)
Rosemary and coarsely chopped walnuts or pecans for garnish
Prepared phyllo pastry

Instructions

Stuff phyllo pastries with cheese and kitskitchen Seasonal Cranberry Spread.

Top with rosemary and walnuts/pecans and serve.

Turkey Leftover Rollups

About 2 tbsp kitskitchen Seasonal Cranberry Spread
Turkey, from last night
Lettuce or spinach leaves
Tortilla wraps (we like whole wheat)
Vegan mayo, if desired

Instructions

On a tortilla wrap, spread vegan mayo, lettuce and turkey.

Tightly roll up the wrap, then cut vertically to create roll ups.

Top with kitskitchen Seasonal Cranberry Spread to serve.

Simple Sugar Cookies

We believe in indulging…but in moderation! So, this recipe is for 12 cookies only 😉

2/3 cup all purpose flour
1/4 cup sugar
1/4 tsp baking soda
1/4 egg
1/8 tsp baking powder
1/4 tsp vanilla extract
1/4 cup butter, softened
About 4 tbsp kitskitchen Seasonal Cranberry Spread

Instructions

Heat oven to 375F.

Mix together flour, baking soda and baking powder.

In your second bowl, whip the butter and sugar until smooth, then add the egg and vanilla. Slowly add the dry ingredients.

If desired, you can add the Cranberry Spread right into this mix, or you can save it to top the cookies with!

Roll dough into little balls and place onto an ungreased baking pan.

Bake for 8-10 minutes or until golden. Let cool for a couple of minutes before transferring to wire racks!
